The Job
Reporting to the Caprice Chef, the Pastry Chef will manage, plan, organize, control and direct the work of employees responsible for preparation of sweet items, pastries, cakes, ice creams, sorbets, fruit compotes breads, chocolates and show pieces while ensuring superior quality and consistency.
Responsibilities
Develop customized and modify existing menus for customers after the evaluation of their needs and consideration of potential food risks
Inspect the operation of cooking equipment, conditions of utensils and supply and quality of food to make necessary purchase or replace decisions
Train and develop team members with latest trending techniques in pastry, bakery and confectionary products, and equip them with relevant knowledge in food match and portion control
Review food consumption information from event orders and reports, ensuring preparation for sufficient supply in upcoming events and daily operational needs
Explain to customers on potential food safety hazard and provides professional advices during dining or pre-event meetings
Requirements
Possess valid authorization for work in Hong Kong
Diploma in Culinary/Pastry or related discipline
Minimum 3 years’ managerial experience in Pastry Kitchen
Good command of spoken and written English
Strong leadership and communication skills
